3 Tbsp lime juice
2 tsp rice vinegar
2.5 Tbsp olive oil
1 tsp salt
1/4 tsp fresh ground black pepper
1 tsp fresh grated ginger
3 or 4 fresh basil leaves, chopped
1/4 tsp fresh thyme leaves
1/4 fresh jalapeƱo, minced (seeds optional if you prefer spicier)
3/4 lbs swordfish
Whisk together all ingredients (except fish) in as small a pan as possible to hold the fish. Cover and marinate 2 to 3 hours, turning once. Broil or grill to desired doneness (130 to 140°F internal temperature).
